I have a thing for cupcakes. I can't really explain it, except that a trip to this place and a bite of one of these little darlings made a big impression. I don't often eat cupcakes, actually. But I think they're mighty cute, not to mention fun to bake and decorate. Lately, I've been inspired by The Cupcake Queen, and I plan to make my own absolutely-homemade cupcakes, once I find the perfect, easiest, best-tasting, fail-safe recipe. I'm just waiting for the queen to announce which one that is. (You will do that, won't you, CQ?)
Yesterday, however, I went the Sandra Lee route and voila! Presenting my first-ever Halloween cupcakes:
In case you don't know who Sandra Lee is, she's a perky blonde who hosts her own show
on The Food Network. As far as I can tell, Sandy doesn't make anything
from scratch. She's all about storebought and home-assembled. (Not that
there's anything wrong with that.) For example, she'd probably take a
Twinkie, slice it in half, place raspberries between the slices,
drizzle Hershey's syrup on top, spray Reddi-Whip over the whole thing,
and call it fancy. It may very well be tasty, but nobody would be fooled into thinking it's homemade. (Just don't tell that to Sandy.)
My Sandy-esque method for creating these cupcakes was as follows: I used Pillsbury's Funfetti Halloween Cake Mix and Duncan Hines Creamy Homestyle Classic Vanilla Frosting. I baked the cupcakes in festive Halloween paper liners. Then, I added orange food coloring to the frosting and piped it onto the cupcakes using a Ziploc baggie. (It was my very first piping attempt, as you may have surmised.)
Most people aren't impressed by the ability to bake a
batch of something from a mix, but I'm pleased to report that my cupcake
endeavor achieved the desired result. My boy thought they were a bit o' heaven. . .
even though the frosting gave him his first-ever case of The Runs. (There's one for the baby book, right?) Can't blame a mother for
trying.

I love Cupcakes, In New York I went to three cupcake bakeries. They looked better than they tasted. But I still enjoy them!
