Pie? Oh, My!

I'm feeling a little gypped. 

It's 10:30 p.m., and I just learned that today was National Pie Day. Had I known sooner, I would've shunned the slice of creamy, dreamy coconut cake I helped Bugaboo eat after dinner as a show of solidarity for all-American pie. Well, maybe not. Most likely not. But I would've been sure to eat a piece of pie at some point in my day--you know, out of respect. In the same way that I make sure to drink a margarita on Cinco de Mayo. Because it's just the right thing to do.

You know who else is fond of pie? Why, our brand-new president, Barack Obama, of course.

In honor of National Pie Day and our 44th president, I offer a recipe for Pie You Can Believe In!

Key Lime Pie (from Cooking Light Magazine)

2 large eggs
2 large egg whites
1/2 cup Key lime juice (such as Nelie and Joe's Famous Key West Lime Juice
1 teaspoon grated lime rind
1 (14 oz) can fat-free sweetened condensed milk
1 (6 oz) reduced-fat graham cracker crust
1 1/2 cups frozen reduced-calorie whipped topping, thawed

1. Preheat oven to 350 degrees.
2. Beat eggs and whites with a mixer at medium speed until well blended. Gradually add juice, rind, and milk to egg mixture, beating until well-blended. Spoon mixture into crust, and bake at 350 for 20 minutes or until almost set (the center will not be firm but will set up as it chills). Cool pie on wire rack. Cover loosely and chill 4 hours. Spread whipped topping evenly over filling. Yields 8 servings.


It's interesting to note that tomorrow is National Peanut Butter Day. Considering the salmonella scare that is sweeping the nation, I think I'll reserve the caloric intake for January 27th--National Chocolate Cake Day.

A National Pie day? Is it sponsored by the Fruit growers of America? I had a key lime pie about a week ago at a goodbye party for a friend who was moving to Hawaii. Netchick might want a piece.

Another Key Lime - QUICK to make -
1 package sugar free lime jello
1/4 cup water, boiling
2 containers of Key Lime Pie yogurt
1 container of whip cream
1 graham cracker crust, pre made.

Dissolve the jello in the water. quickly mix in the yogurt and whip cream. Make sure it's really well blended so you don't get pieces of jello through out. Pour in the pie crust. Garnish with lime zest if you want. Chill for at least 30 minutes or until set.
Serve and be careful not to eat all in one place.

It's not the traditional pie recipe, but it's fast, tasty, and if you use the sugar free/fat free ingredients, not a bad for you dessert.
